6 skinless and boneless chicken breast
1/2 cup diced celery
1/3 cup pickle relish
1 cup Hellman's Mayonnaise
1 teaspoon salt
1/2 teaspoon pepper
Rinse and clean chicken in cold water and place in 8 quart pot. Cover chicken breast with water, bring to a boil and cover with a lid, then reduce heat to simmer chicken until done, approximately 45 minutes. Drain and when chicken is cool cut into small pieces. Add remaining ingredients and stir. If too dry add 1/4 cup of water or chicken broth.
This is a great recipe for chicken salad, so easy to make for sandwiches or party trays. Use fresh chicken to make this recipe, Amish chicken is perfect and usually the most tender. |
